Creamy Avocado Citrus Salad Dressing
This light summer dressing is great on greens, and also drizzled over grilled fish or chicken! The citrus adds zip and helps the dressing keep its pretty, bright green color!
Ingredients
- 1 Ripe Avocado
- 1/4 Cup Apple Cider Vinager
- 1/4 Cup Honey
- 3 TBS Fresh Lime Juice
- 1 Clove Garlic Chopped
- 1/4 Cup Cilantro
- 1/2 Small Jalepeno Seeded and Deveined*
- 1/4 Cup Water Can add more to thin to preference
- Salt & Pepper to taste
Instructions

•Add all ingredients except water to a food processor or blender
•Blend for about 1 minute or until smooth and creamy
•Drizzle in water gradually to make it thinner to salad dressing consistency. Use less water to keep it thicker for drizzling over meats or pasta.
•Keep in glass jar or bottle in fridge for up to 1 week
* If you like more heat you can leave the sees and veins in your jalapeno.
